The Parsi Egg Obsession

Parsi Egg dishes are in a league of their own and Parsis share an extremely close bond with their egg dishes. One that has captured the imagination and appetite of Parsis over generations. For us Parsis, the egg symbolizes prosperity and fertility and forms an integral part of our religious ceremonies too. The act of “Achoo-meechoo” or to ward off evil, where the egg is waved around the person’s head and then broken, is similar to what Hindus do with a coconut.

Being complete foodies, the Parsi’s love to experiment with “mix n match” where sometimes the humble egg becomes the most sought after dish leading to creations such as Bheeda par Eeda (Eggs on Lady fingers) Tomato Papeta par Eeda (Eggs on sliced potatoes and spicy tomatoes) and you could go on with all sorts of “Par eeda” meaning egg on top of everything! The summer special “Kanda-Kera par eedu” (Eggs baked on a mixture of mangoes and caramelized onions) is a seasonal favourite.

Another Parsi egg specialty is the “Akuri”- a spicy masaledar scrambled eggs on hot buttered toast. The Bharuchi Akuri is a richer Akuri, with nuts, raisins, butter and cream. Parsi Poro or an omelette, is a spicy version with onions, tomatoes, and masalas, all adding their unique flavours. There are a  few interesting variations too, some with Bheja (brains) and some stuffed with ‘kheemo’ (mince meat).

Many ‘continental’ dishes are made in a Parsi Home. It could have been one of those things borrowed from the colonial British rule in India. The fascination with custards and puddings, fluffy soufflés and omelets have all been taken from the time the British were in India and the Parsi’s worked closely with them and most Parsi wives learnt these dishes as a part of their culinary repertoire. The stuffed hard-boiled eggs, similar to devilled eggs, are a common hors d’oeuvre, served in Parsi homes when entertaining.  Eh Dikra, you might not find anything else in a Parsi Home, but you will always, most definitely find Eggs.

Bombay takes pride in its chaat, be it Bhel, SevPuri, Dahi Puri or the most loved Vada Pav. These stand testament to Bombay’s creativity and innovation with food. The part-soggy-part-crispy, sweet and spicy nature of Bombay Chaat is a great accompaniment to early evening socialising and chatter. To highlight this versatility, we’ve created the concept of the Bombay Chaat House this September and October, in which our chefs would be working with seasonal and some unique ingredients and give Bombay chaat a new face and edge.

The Legendary Kolah Vinegar

Though Parsis have been in India for over a thousand years, they still have some food links back to Persia. One of these is the Brown Sugarcane Vinegar or Sarko from Navsari. Sarko comes from the word ‘Sirka’ and Kolah from the makers of this vinegar. There are two famous families in Navsari who make this vinegar E.F. Kolah & Sons and E.H. Kolah & Sons. They’ve been making Kolah vinegar since 1885 and they still do it the same way!

The reason why this particular vinegar is different is because it is made with sugar cane. Indian vinegars that are commonly available include most synthetic variants which don’t have a natural after taste or underlying flavour, Kolah in that case tastes of tart molasses and has a colour that is as stark. Vinegar was essentially soured wine, thus the name and red wine or white wine vinegars show up quite often in European food. What Balsamic Vinegar is to Italian food, Sugarcane vinegar is to Parsi food! Used most often in Khattu Mithu Gosht, Saas ni Macchi, Prawn Patiyo, Jardaloo ma Gosht, Lagan Saras Stew among others! Since this is one cuisine where the balance of sweet, sour, spicy and even bitter features distinctively is most dishes, the presence of a unique and natural ingredient like this is no surprise.

Hyderabadi Irani Cafe Menu

Like Bombay, Hyderabad also has its own Irani Café culture, which has been instrumental in defining the city’s eating out culture. In the 60’s and 70’s, Irani Cafés used to rule the roost and were trendsetters. Places like Olympia in Abids used to have a jukebox in the old days. Hyderabad’s most famous Birgani place – Paradise, started off as an Irani Café serving Bun-Butter, Tie Biscuit, Keema, Eggs and Irani Chai, before it transformed into its current avatar of a much loved biryani place.

Unfortuntely, the Hyderabadi Irani Cafés in their classic form, are a dying breed. To put back the spotlight on them, the SodaBottleOpenerWala Hyderabad team decided to include classic dishes of Hyderabadi Irani Cafés as part of our menu, in addition to our regular Parsi and Bambaiyya fare. As part of this, we serve an excellent Biryani, classic Hyderabadi Haleem, the inseparable combination of Kaddu ka Dalcha and Baghara khaana. We also serve typical Hyderabadi snacks like Talahuwa ghosht and Lukhmi. We sincerely hope that the Irani Cafés of Hyderabad reinvent themselves and regain their past glory and again become defining spaces for Hyderabad’s eating out culture, like how they were in the 60’s and 70’s.
